Janis’ Fall-Tweaked Butternut Squash

Ingredients:

  • Peeled and cubed squash
  • Potato
  • Onion
  • Salt
  • Pepper
  • Cayenne, but here is the tweak. Serve with toppings, like pizza. Nutmeg, sunflower seeds, Parmesan, bacos, red pepper flakes….blend enjoy! Something for everyone.

Method:

  1. Follow any regular recipe for butternut squash
  2. Serve with toppings (much like how you would for pizza). Ex. Nutmeg, sunflower, seeds, Parmesan, bacos, red pepper flakes.
  3. Blend the the toppings.
  4. Simmer in just enough chicken stock to cover.
  5. Cook until veggies are tender.
  6. Enjoy!

Notes for anosmics from Janis:

  • The trick isĀ in the toppings…”I cannot taste, so my soup has a lot of cayenne!” There’s something for everyone.
